Zesty Guacamole

Summer has finally arrived in the valley and people are busier than ever enjoying the nice weather with a day at the beach, a game of golf, or boating on the lake. This means there’s less time available for making your own snacks or appetizers, so here’s a quick guacamole recipe that’s sure to please. It’s super easy and only takes about 5 to 10 minutes to make and there is very little cleanup. So, grab your avocados and a nice mexican beer or a margarita, and enjoy!
- 2 avocados
- 2 Tbsp lime juice
- 2 cloves of garlic (start with one garlic clove and add more to taste we like 2)
- 4 Tbsp finely chopped red onion (plus a little extra to garnish)
- 2 Tbsp sour cream
- 1 tsp dried diced jalapeno peppers (use fresh jalapeno peppers if you have them and add according to taste but dried is quicker)
- 1/4 tsp cumin
- Dash of cayenne pepper
- Salt and fresh cracked pepper to taste
Method
Cut avocados in half. Remove seed. Scoop out avocado from the peel and put into a mixing bowl. Add lime juice and mash with a fork to desired consistency. Add remaining ingredients and mix gently. Cover with plastic wrap directly on the surface of the guacamole to prevent the air from browning it. Refrigerate until ready.
Just before serving, garnish with the extra chopped red onion and a few grinds of fresh cracked pepper. Enjoy with your favorite tortilla chips or fresh vegetables!
This recipe is only one of many variations that I make. You can easily charge it up a bit by stirring in about 3/4 cup of your favorite salsa and/or a 1/2 cup of refried beans for a bit of a different flavor and consistency.
